Produzido com carne 100% de porco Bísaro, uma raça portuguesa tradicional do Norte criada nos terrenos da Quinta, este chouriço segue uma receita simples e antiga: alho, pimentão e vinho.

A cura é feita de forma tradicional. O chouriço seca com o calor da lareira, sem fumo direto, durante cerca de 15 dias, até ganhar a textura firme e o sabor característico — intenso, mas equilibrado.

Produzimos em pequena escala e um único lote anual, por isso a disponibilidade é limitada a apenas 200 unidades.

The most important things about our products

We produce handcrafted products.

We create recipes and come together to bring them to life, in small batches. Inspired by the regional cuisine of Trás-os-Montes and made with simple processes, without artificial colors or preservatives.

We pack by hand.

Everything we produce is packaged manually. We bottle the products ourselves and write the labels, one by one. It's a careful process, with attention to detail.

Regional raw materials

Our project began with a desire to revitalize the region, and therefore we seek to ensure that each product carries with it a piece of this territory: local ingredients, people, and know-how.

Tradition & Innovation

We are inspired by the traditions of Trás-os-Montes, but we like to add our own touch and create new flavor combinations, always respecting the origin.

Local partners

We work with local partners who share the same demand for quality and production methods. These are producers and artisans from the region whom we know well and with whom we build, batch by batch, a network of trust.

Sustainability on the Farm

Working directly with the land implies an increased responsibility: in how we care for olive groves and orchards, in water management, and in the constant concern of reducing food waste.
