Made with 100% Bísaro pork, a traditional Portuguese breed from the North raised on the Quinta's lands, this sausage follows a simple recipe: garlic, bell pepper, and wine.

The curing process is done in the traditional way. The chorizo ​​dries with the heat of the fireplace, without direct smoke, for about 15 days, until it gains a firm texture and characteristic flavor — intense, but balanced.

Produced on a small scale in two different batches of chorizo: Traditional Chorizo , with a more rustic and firm texture, ideal for cooking; and Soft Chorizo , finely ground and mild, ideal for eating raw, sliced.

We only produce one batch per year, limited to 200 units .

About our production

We produce artisanally

We create recipes and come together to bring them to life, in small batches. Inspired by the regional cuisine of Trás-os-Montes and made with simple processes, without artificial colors or preservatives.

We prepare everything by hand

We package and bottle the products ourselves by hand and write the labels, one by one.

We use regional raw materials

The strawberries, cherries, and blueberries come from producers in Alfândega da Fé and Vilarelhos, and it is in our regional cuisine that the raw materials come to life, through the hands of people from the village.

Tradition & originality

We are inspired by the traditions of Trás-os-Montes, but we like to add our own touch and create new flavor combinations, always respecting the origin.

We prioritise local partners

We work with local partners who share the same demand for quality and production methods. These are producers and artisans from the region whom we know well and with whom we build, batch by batch, a network of trust.

Sustainability on the Farm

Working directly with the land implies an increased responsibility: in how we care for olive groves and orchards, in water management, and in the constant concern of reducing food waste.
