A Recipe with History
The idea came from my mother. Inspired by the dense texture of balsamic vinegar, she wanted to create something with a similar character, but made with the fruit from the farm. The goal was simple: to make sure the surplus from our annual jam production didn't go to waste.
A Process That Cannot Be Rushed
Despite what the simple look of the bottle might suggest, the production process for these vinegars is a lengthy one. The base is the surplus from our fruit jams, made with seasonal fruit and sugar. What follows is a fermentation process that takes several months.
All Made by Hand
When we say artisanal, we mean it: from preparation to bottling, every bottle passes through the hands of the person making it. There are no production lines or automated processes. Production happens in small batches, which ensures care and attention at every stage, but also means that once they sell out, there are no more.
What Sets Them Apart from Industrial Vinegars
An industrial vinegar is, in most cases, produced at large scale using accelerated fermentation processes and, frequently, with the addition of colourings, artificial flavourings, or preservatives to standardise the product and extend its shelf life.
Quinta Mourisca's seasonings have none of that. The flavour is that of real fruit: seasonal, regional. The dense texture comes naturally from the pectin present in certain fruits and from the slow fermentation process. The acidity is gentle, far more subtle than that of a traditional wine vinegar, which makes them surprisingly versatile in the kitchen.
A Range with a Character of Its Own
We currently produce cherry, strawberry, blueberry, pomegranate, quince, and citrus seasonings, each with its own distinct sensory profile. Some are limited editions that return only when the fruit allows. Others have become Quinta classics, such as the citrus and quince seasonings.
All of them share the same origin: a simple idea of not letting things go to waste, carried out with rigour, patience, and great care.
